Il donne des baies, d\u2019abord de couleur verte puis bleu-noir \u00e0 maturit\u00e9. Par contre il faut \u00eatre patient car les baies mettent 3 ans pour m\u00fbrir .<\/p>\n\n\n\n<p>C\u2019est une \u00e9pice employ\u00e9e depuis tr\u00e8s longtemps et dans de nombreux pays, notamment dans les rago\u00fbts de viandes ou gibiers, les charcuteries et particuli\u00e8rement dans la choucroute . Elle \u00e9tait tr\u00e8s populaire au Moyen-\u00e2ge et au 16e si\u00e8cle.<\/p>\n\n\n\n<p>Bien s\u00fbr c\u2019est l\u2019ingr\u00e9dient principal du gin et que vous retrouvez dans notre gin Mistello.<\/p>\n\n\n\n<p>Les baies ont un saveur sucr\u00e9e aromatique tr\u00e8s agr\u00e9able mais \u00e9galement un go\u00fbt de r\u00e9sineux plut\u00f4t \u00e2cre.&nbsp; C\u2019est pour cela que dans la recette du ratafia il ne faut pas concasser les baies.<\/p>\n\n\n\n<p>La fabrication du ratafia de geni\u00e8vre est assez simple; c\u2019est probablement la recette la plus simple de tous les ratafias que nous essayons ici. Nous avons suivi fid\u00e8lement la recette du Manuel du distillateur liquoriste de 1827.<\/p>\n\n\n\n<p>Vous allez faire mac\u00e9rer les baies de geni\u00e8vre, fra\u00eeches et enti\u00e8res, dans de l\u2019alcool pendant 48h. Apres ce d\u00e9lai, filtrer et conserver la liqueur dans un bocal et les baies dans un bocal diff\u00e9rent.<\/p>\n\n\n\n<p>Vous allez verser sur les baies de l\u2019eau chaude mais pas bouillante, aux alentours de 60-70\u00ba C, et laisser mac\u00e9rer pendant 12 heures \u00e0 temp\u00e9rature ambiante. Ensuite vous ajoutez le sucre \u00e0 cette pr\u00e9paration. Ici nous utilisons du sucre en poudre comme dans la recette originale. Le sucre va se dissoudre rapidement&nbsp; dans l\u2019eau chaude. Vous devez faire attention \u00e0 ne pas \u00e9craser les baies de geni\u00e8vre pour \u00e9viter d\u2019apporter des gommes et de l\u2019amertume au ratafia.<\/p>\n\n\n\n<p>Maintenant il s\u2019agit de m\u00e9langer les deux mac\u00e9r\u00e2ts et d\u2019y incorporer tous les \u00e9pices (maci, clous de girofle, cannelle).
