Pour l\u2019instant, nous nous laissons inspirer par les fruits et plantes de la M\u00e9diterran\u00e9e, donc apr\u00e8s le coing voici la grenade.<\/p>\n\n\n\n<p>La grenade provient du grenadier, l\u2019arbre, pas le militaire. C\u2019est un fruit cultiv\u00e9 depuis des mill\u00e9naires. Il ressemble un peu \u00e0 une pomme, de couleur rouge-orang\u00e9e, avec \u00e0 l\u2019int\u00e9rieur de petites graines triangulaires de couleur grenat. La r\u00e9colte a lieu en automne. Il faut savoir que la grenade ne murit plus apr\u00e8s avoir \u00e9t\u00e9 r\u00e9colt\u00e9e. Le go\u00fbt de la grenade va de acide, aigre-doux \u00e0 presque sucr\u00e9e.<\/p>\n\n\n\n<p>La fabrication du ratafia de grenades n\u2019est pas nouvelle non plus. On trouve aussi sa recette dans la bible de la cuisine proven\u00e7ale, Le Reboul, sous la cat\u00e9gorie des liqueurs de m\u00e9nage. Le nom proven\u00e7al est Ratafia de mi\u00f3u-grano.<\/p>\n\n\n\n<p>Selon le Manuel du distillateur liquoriste, la recette du ratafia de grenades n\u2019est pas diff\u00e9rente des autres ratafias.<\/p>\n\n\n\n<p>Tout commence par le choix de grenades bien m\u00fbres et bien juteuses. Apr\u00e8s avoir ouvert et r\u00e9cup\u00e9r\u00e9 toutes les graines, les \u00e9craser d\u00e9licatement pour exprimer tout leur jus sans \u00e9craser les p\u00e9pins qui risquent d\u2019apporter de l\u2019amertume.<\/p>\n\n\n\n<p>Nous allons verser le jus des grenades, avec la vodka et tous les \u00e9pices (clou de girofle, vanille, cannelle ) dans un bocal en verre. Le distillateur-liquoriste laisse le libre choix des \u00e9pices \u00e0 ajouter au mac\u00e9r\u00e2t. Nous avons choisi d\u2019y mettre de la cannelle plut\u00f4t que du maci.<\/p>\n\n\n\n<p>Pour extraire le plus possible la saveur des grenades, nous avons d\u00e9cid\u00e9 d\u2019ajouter au m\u00e9lange les graines et de pas mettre le sucre \u00e0 cette \u00e9tape.<\/p>\n\n\n\n<p>Vous laissez mac\u00e9rer pendant 10 jours \u00e0 temp\u00e9rature ambiante.<\/p>\n\n\n\n<p>A la fin de la mac\u00e9ration, filtrez le liquide dans une passoire de type chinois.
