De plus, chaque plante doit \u00eatre trait\u00e9e s\u00e9par\u00e9ment dans des cuves diff\u00e9rentes.<\/p>\n\n\n\n<p>Ensuite vient la phase d\u2019<strong>\u00e9gouttage<\/strong> qui consiste \u00e0 extraire le jus. Le r\u00e9sidu peut \u00eatre par la suite trait\u00e9 par distillation dans un alambic.\u00a0<\/p>\n\n\n\n<p>La derni\u00e8re \u00e9tape de la fabrication est la plus d\u00e9licate. En effet, on doit <strong>m\u00e9langer<\/strong> les mac\u00e9r\u00e2ts ou les distillats tout en ajoutant de l\u2019eau pure ainsi que de l\u2019An\u00e9thol. Le but \u00e9tant d\u2019obtenir un taux d\u2019alcool ne d\u00e9passant pas 45\u00b0.<\/p>\n\n\n\n<p>C\u2019est l\u2019id\u00e9e g\u00e9n\u00e9rale. Dans la r\u00e9alisation du Pastis, chaque fabricant va utiliser sa m\u00e9thode personnelle et sa touche aromatique sp\u00e9cifique.<\/p>\n\n\n\n<p>La fabrication du Pastis, comme tout alcool fort, est r\u00e9glement\u00e9e. On ne peut pas faire n\u2019importe quoi.<\/p>\n\n\n\n<p>Selon la <strong>l\u00e9gislation Europ\u00e9enne<\/strong>, le pastis doit \u00eatre fabriqu\u00e9 en aromatisant de l\u2019alcool neutre d\u2019origine agricole avec des extraits :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>D\u2019anis vert<\/li>\n\n\n\n<li>D\u2019anis \u00e9toil\u00e9 (badiane)<\/li>\n\n\n\n<li>De fenouil<\/li>\n\n\n\n<li>De r\u00e9glisse<\/li>\n\n\n\n<li>Et d\u2019autres plantes contenant un ingr\u00e9dient aromatique similaire.\u00a0<\/li>\n<\/ul>\n\n\n\n<p>Ce processus peut \u00eatre r\u00e9alis\u00e9 de trois mani\u00e8res (ou une combinaison d\u2019entre elles) \u2013 il peut s\u2019agir :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>D\u2019une mac\u00e9ration et\/ou d\u2019une distillation<\/li>\n\n\n\n<li>D\u2019une re-distillation d\u2019alcool avec des plantes aromatiques\u00a0<\/li>\n\n\n\n<li>Ou d\u2019un ajout d\u2019extraits naturels de plantes distill\u00e9es.\u00a0<\/li>\n<\/ul>\n\n\n\n<p>Pour tous les petits chimistes, voici la <strong>composition scientifique<\/strong> du Pastis.\u00a0<\/p>\n\n\n\n<p>Le pastis contient principalement de l\u2019an\u00e9thol (1,5-2 g\/l) pr\u00e9sent dans l\u2019anis et l\u2019aneth; ainsi que des chalcones et de l\u2019acide glycyrrhizique (0,05-0,5 g\/l). Ce sont les principes actifs majoritaires de l\u2019extrait de racine de r\u00e9glisse.&nbsp;<\/p>\n\n\n\n<p>Apr\u00e8s filtration, la liqueur anis\u00e9e est l\u00e9g\u00e8rement sucr\u00e9e (moins de 100 g\/l) et color\u00e9e au caramel; gr\u00e2ce \u00e0 quoi la plupart des pastis ont une teinte jaun\u00e2tre voire l\u00e9g\u00e8rement ambr\u00e9e. Certains producteurs n\u2019utilisent cependant pas de colorants.<\/p>\n\n\n\n<p>G\u00e9n\u00e9ralement, les ingr\u00e9dients aromatiques de base utilis\u00e9s par tous les producteurs sont l\u2019anis et la r\u00e9glisse. Ils donnent au pastis son ar\u00f4me et sa saveur uniques.
