The Pastis of Provence

Pastis is an alcohol that originates from Provence, it came to life in the early 1900s in Avignon. A style of liqueur made with an assemblage of different maceration of aromatic plants. A refreshing alcoholic beverage based around the Anis Star that is diluted with fresh water and ice.

Our Pastis Anista focuses on the plants we find in the Provence countryside. All plants are all cultivated organically. Thyme, sage, bay leaf and lavender have been macerated to extract all their aromas before being assembled to create our Pastis. The thyme and sage bring the slightly vegetal side to the Pastis. The key ingredient being fine lavender which gives of slightly floral notes.

We fall under the appellation Pastis (and not Pastis de Marseille), which means a less anis focused taste. The taste is rich without being overwhelming and brings a freshness to the mouth. Although being at 45% ABV the Pastis Anista is quite smooth and well rounded.
